Electric or Gas Commercial Deep Fryer: Which Should You Buy?

This can actually be a pretty major question for almost any establishment, as it can have a major effect on how easy the machine is to cook and to operate.  You’re going to find that there are distinct advantages as well as disadvantages to either type, so you want to weigh up what should be the best option for you.  Whether it’s ease of operation that you’re after, or just a fryer that’s going to ensure it’s going to be easy to take care of in the long term, there are a few things you have to think about.  Usually a commercial deep fryer is a big investment, so you really want to put some thought into where your money is going to go.

Cost of Equipment

Easiest to Use

This really refers to which type of commercial deep fryer is going to be able to get hot and get cooking the fastest, and there gas is always going to win out.  That’s because gas just burns hotter, so it’s going to be able to heat up your oil really fast, and also to higher temperatures than electric can handle.  But you’re also going to find that it’s able to heat more oil at once as well, this way, you can be sure that it’s going to be capable of heating up the really big fryers, so if you have a lot of food you need to fry you’re going to be covered every time.

Ease of Cleaning

But of course a mark of all great kitchen equipment is how easy they actually are to clean, and you’re going to find that here electric tends to win out.  That’s because a commercial gas deep fryer requires that you clean out the oil and everything from time to time, but also that you clean out the gas portions as well after prolonged use every once in a great while.

This is not so with electric, and you’re going to find that it’s actually pretty easy to change out your oil and wash the machine.  That’s a necessity, because the problem with deep fryers is that you can always taste when you’re cooking with older oil, and it’s going to be a poor reflection on the food in the end.  If you’re not using oil that you can count on being fresh and ready for use, then the food is going to be affected and people are going to notice in a bad way.

Longevity

Here gas wins out again, because you’re going to find that few things are built so solidly as a powerful gas cooker.  You’ll also find that typically this can be due to the fact that there are fewer moving or complicated parts, and so they are a lot more solid.  Plus they have to be built to withstand the heat and abuse of literally burning fuel, which just makes them a lot stronger.  This way, you can ensure that your investment on a commercial gas deep fryer is usually going to yield you a lot more cooking in the long haul.
